Organic Lemon Butter Biscuits

Morning tea is a much loved, time honoured Australian tradition. A ‘cuppa’ and a ‘biccy’ provides family, friends and colleagues with the opportunity to rest, reflect and rejuvenate. Kennedy’s staff invite you to enjoy one of our favourite morning tea delights. Sweet and sour in taste, these delicious organic treats offer the perfect mid morning break, bound to bring out the sweet side in any boss

 

INGREDIENTS

Basic biscuit dough

250g unsalted organic butter

1 teaspoon vanilla essence

1 cup (160g) icing sugar, sifted

2 cups (300g) plain flour

1 organic egg white, beaten until foamy

¼ cup (55g) caster sugar

Lemon butter

2 organic eggs, lightly beaten

½ cup (110g) caster sugar

grated rind of 1 organic lemon

¼ cup (60ml) organic lemon juice

30g organic butter

 

METHOD

Preheat oven to moderate 180°C. Roll level teaspoons of chilled basic biscuit dough into balls and place on prepared trays. Press down with a fork which has been dipped in cold water to prevent sticking.

Bake for 12 minutes, until just beginning to colour. Cool on a wire rack before storing in an airtight container.

Meanwhile, make lemon butter. Place all ingredients in a heavy based saucepan on medium heat. Stir constantly for 5-10 minutes, until thick. Try not to boil as the mixture will curdle. Remove from heat and cool completely, stirring occasionally.

Just before serving, join biscuits in pairs with ½ teaspoon of lemon butter between each.

Kennedy’s employees regularly undergo formal training across varying aspects of our business.  Recent sessions included; fire safety, manual handling techniques, safe working practices, strap and pack timbers and forklift operations.

A combination of on the job and high quality third party training ensures all Kennedy’s employees are up to date with important safety and general work practices within our business.

Our latest training session saw staff proudly reaffirm their commitment to our core values. Facilitated by a trained professional, staff members were also encouraged to set personal and business goals with the plan to benchmark one another as the year progresses.

In addition to these regular and ongoing professional development opportunities, four of Kennedy’s team members are presently undertaking accredited timber studies.

Sean Halligan and Calvin Wallace are completing a FITEC Certificate 2 in Timber Manufacturing.

Kevin Faucher and Jeremy Fischer (pictured above left with Michael Kennedy) recently commenced their four year apprenticeship in Wood Machining.

All Kennedy’s apprentices and trainees are now vying for the prestigious TABMA Trainee of the Year Award.

Like many Australians, the Kennedy’s family were deeply shocked and saddened by the recent Victorian Bushfires on Black Saturday. In support of our fellow Australians affected by this tragedy, Kennedy’s staff, customers and suppliers all pitched in raising an incredible $17,846.40 in donations for the Red Cross Bushfire Appeal.

The POWER of Poles

Once deemed suitable for a single purpose, retired power poles are making a fashionable come back within the timber industry

Previously powering our local streets and towns, recut power pole posts and beams can now be found across a variety of commercial and residential applications.

Kennedy’s has developed world class protocols and specialised handling for all redundant timber products including power poles, bridge timbers, cross arms and general construction timbers. Once these timbers have reached their end of life service, Kennedy’s systems provide asset managers with a clear chain of compliance, in accordance with EPA requirements.

These extraordinary recycled timbers have now found a new lease of life within the Bell Tower of St John’s Cathedral Brisbane, the flooring of the Federal Attorney General’s office Canberra and the Tree of Knowledge memorial Barcaldine - see story page 5.

Assisting in the preservation of our remaining rainforests, locally and globally, this venture provides Kennedy’s clients with yet another quality environmentally friendly timber choice.

Future Talent Takes Tour

Architecture students from The University of Queensland (UQ) were recently given the opportunity to learn more about the value of recycled timbers whilst touring Kennedy’s extensive Narangba Production Facility.

Over 140 first year students from the prestigious university, accompanied by their lecturers and tutors were welcomed on site, witnessing firsthand the processes involved in transforming recycled timbers into a wide range of adaptable, environmentally friendly building products. 

Kennedy’s is proud to support such educational experiences for future generations of industry talent.

Additional tours for UQ and QUT students have been planned for 2009.

Barcaldine’s Tree of Knowledge is commemorated in a unique display of Kennedy’s recycled timber

Recognised as the birthplace of the Australian Labor Party, this western Queensland Ghost Gum played a major role in Australian politics. With a memorial presently under construction celebrating its significance, it will now continue to be a symbol of the party’s history for many years to come.

In 2008 it was announced that the Federal Government, in partnership with the State Government and Barcaldine Regional Council, would provide the multi-million dollar funding required to honour this heritage listed icon. 

“It’s a structure that hasn’t been done before anywhere in the world. Once you walk in under the structure itself you will look up into a cathedral-type effect with 3,600 hanging timbers, so it will recreate the canopy of the old tree,” says Mayor Rob Chandler.

“These timbers will come together to create the canopy of the tree from an 1889 photograph. It’s 18 metres square, five stories high, made out of timber.”

Appointed to deliver the project, dynamic Brisbane based architects, m3architecture, conducted an extensive state-wide tender process resulting in the selection of Kennedy’s product. Kennedy’s are proud to have won the competitive tender, guaranteeing the highest standard quality control audit systems were implemented ensuring the best Queensland recycled timber would forever grace this unique design.

Recut from retired power poles, Kennedy’s team have carefully prepared the blackened exterior timbers to match the intent of the architectural design, something which has local tongues wagging.

The Tree of Knowledge memorial is due to open for Labour Day celebrations in May 2009

History Embedded In Its Boards

The new Woody Point Jetty is the ideal blend of Kennedy’s classic aged timbers culminating in an impressive marine and recreational structure.

Over 240 metres in length and six metres wide, the jetty is now home to shade shelters, bench seating, drinking water, rod holders, lighting, fish cleaning tables and informational plaques.

Built in the late 1880’s, the old Woody Point Jetty originally serviced the ferries crossing Bramble Bay. Dismantled late last year, the new jetty has been rebuilt using Kennedy’s recycled timber primarily sourced from the Mackay Wharf. This 80 year old wood has now laid ground to a modern construction fit for local residents, welcomed visitors and fishing enthusiasts alike.

Funded by the Moreton Bay Regional Council and State Government, this restoration also signifies part of the Q150 celebrations. Officially opened in January 2009, the new Woody Point Jetty is one of the first projects to be completed in honour of Queensland’s 150th anniversary as a state. 

With a proud history strongly embedded in its boards, the structure is further complemented by an extensive foreshore redevelopment. It is hoped that the completion of this project will further enhance social and economic sustainability throughout the Peninsula.

The new Woody Point Jetty celebrates Redcliffe’s  significant role in Queensland’s past, offering a historical tale coupled with an impressive modern timber structure now open for future generations to enjoy.
